Healthy Shrimp & Spinach

One of my favourite dishes to make! It’s healthy, easy to prepare, and it’s also incredibly delicious.  Spinach plays quite a large role in a number of healthy-eating nutrition plans. Healthy Shrimp & Spinach

Preparation time: 15-20min
Serves 2

Ingredients:

  • 1 225g box of frozen shrimps (I use I&J “Select Seafood” Cooked & Peeled Shrimps or similar)
  • 6-7 large fresh spinach leaves, cut in strips (about 3-4 handfuls once chopped into strips)
  • garlic
  • olive oil
  • 1 cup basmati rice
  • 5 and a half cups of boiling water
  • salt
  • OPTIONAL: “Salts of the Earth” celery salt

Rice – Microwave Method
Pour the cup of basmati rice into a microwave-safe bowl. Cover with 5.5 cups of boiling water. Add 1 tsp of salt. Microwave on HIGH for 15min. Drain excess water and microwave for a further 5min to allow the rice to steam. Lightly stir and let stand.

While the rice is microwaving:
Pour the olive oil into a saucepan (enough to cover the base) and heat. De-ice (hope that’s the word!) the frozen shrimps by pouring water over them, then throw the shrimps into the pan. (Yes, “throw”!! lol!!) Separate the shrimps that are still frozen together. Once the shrimps have softened (approx. 5min), drain the excess water.

Add the spinach and an extra splash of olive oil, and stir in to mix with the shrimp. Add garlic to taste. Optional: add a dash of “Salts of the Earth” Celery Salt to taste.

Dish the rice into bowls. Serve the spinach and shrimp mix over the rice.. Devour the nomz!
