Butternut Soup

Butternut Soup

This was my first attempt at soup, and it came out AWESOME, by far the best butternut soup I’ve ever had. The main ingredients, I will admit, were all in a pre-packaged Woolworths pack. You owe it to yourself to get a packet of this and make it up. The best part about this though, is that the ingredients of the packet can be bought separately and you really can do this all yourself (I have listed the ingredients below).

You will need:

  • 30g butter
  • Woolworths Butternut Soup Pack (72% butternut, sweet potatoes, potatoes, onions, celery)
  • 1l water
  • 20ml granulated organic vegetable stock (also available from Woolworths)
  • 125ml fresh cream
  • Salt
  • Garlic flakes

Melt the butter in a large pot on moderate heat, add the vegetables and drop the stove to a low heat.   Add a light covering of salt to the veggies and sweat the vegetables for 5-10 minutes by stirring constantly on the low heat (this removes excess moisture from the veggies).   And the water, garlic (to taste) and stock, and up the temperature to bring the mix to a boil for 40 minutes with the lid on.

When the veggies are soft, purée the lot in a blender.   Be careful when doing this, remember that you are blending boiling hot ingredients on a closed container!    Once smooth, tip in the cream and pour it all back in the pot.   Stir the mixture to make sure it is heated through, and then serve with some toast on the side!
