Simple Mediterranean Roast Chicken
Here is one of the easiest dishes I know how to make, and its always impressive and very versatile. The best part about this is that it is an entire meal in one pan!
You will need the following:
- Pack of chicken drumsticks (not the ready made kind, must be raw!)
- Pack of mixed Mediterranean veggies (Woolworths Foods have a great Mediterranean mix)
- Packet of Woolworths “grill, bake & braai” olive oil, garlic and rosemary sauce
- Rosemary and olive seasoning
- Chicken spice
- Cayenne pepper
First, preheat your oven to 180°C and grease a relatively large (and reasonably deep) oven dish. Place the chicken pieces in the centre of it and add the mixed veggies to the sides.
Lightly sprinkle the rosemary and olive seasoning over everything. Take the cayenne pepper, and lightly dust the chicken, don’t over do this, as the cayenne pepper can make or break this meal! Lastly on the spices, sprinkle the chicken with the chicken spice. The last thing you need to do before baking is pour the sauce over everything, do this liberally, but try to ensure that you get a little on all the veggies so that they don’t dry out. You should now have something that looks similar to this:
Now, place the oven dish in the oven. After 20 minutes, pull the dish out and turn all the chicken pieces over and toss the veggies around a bit. Spice the chicken again with some chicken spice and cayenne pepper (again, not too much) and place the dish back in the oven. After another 25 minutes, remove the dish from the oven and serve.
Variation: Instead of using the cook in sauce, 150 ~ 200ml of fresh cream mixed with a dash of brown onion soup makes for an excellent base for a home made sauce! Experiment with your own sauces and let us know!
