Spinach Stuffed Brown Mushrooms
Looking for something a bit on the healthier or vegetarian side? Look no further! This quick and easy to prepare snack / side / starter is a great little nibble to add to your cookbook.
You will need:
- Pack of brown mushrooms (6 is a good number)
- Crushed garlic
- Olive oil
- Roughly 100g baby spinach
- Mozzarella cheese, grated
First, heat some olive oil in a pan and add the spinach. When you hear it sizzling, add about half a teaspoon of garlic (or to taste) and stir fry the mix for about 4-5 minutes. Take them off the stove and allow to cool for a bit, they should shrink quite considerably!
Next, using a damp cloth, wipe the mushrooms off to clean them (rinsing them in water just adds to the liquid content of the mushrooms). Place them on a baking tray (stem side up) and sprinkle some garlic over them, again, use your discretion with the garlic! Now would also be a good time to add any spices or sprinkles that tickle your fancy…
Grab the baby spinach you fried up earlier and place it around the stem of the mushroom, effectively “filling” the mushroom, and then sprinkle the grated cheese over the lot.
Bake them in a pre-heated oven for roughly 15 minutes at 200 degrees, then take them out and serve!
